Trudy's Chocolate Banofee Pie
Ingredients: 250g plain digestive biscuits, crumbled 200g unsalted butter 1 Tbsp dutch cocoa powder 100g brown sugar 400g condensed milk 75g dark chocolate 1 Tbsp golden syrup 300ml double cream 2 small bananas, thinly sliced
Directions: - Melt half the butter and add to finely crumble biscuits and cocoa. Mix well. Press into a 30cm tart pan and chill for about 20 minutes to set base.
- Place sugar and remaining butter in saucepan over low heat and stir until butter is melted. Add condensed milk and stir over low heat for 5 minutes or until mixture is a thick, golden caramel. Remove from heat, add chocolate and golden syrup, and stir well.
- Fill chilled shell with caramel mixture. Chill for at least 1 hour to set.
- Whip cream until soft peaks form. Add sliced bananas and whipped cream to pie and dust with cocoa powder.
