The Devonia Key Lime Pie

For the Crust:
180g digestive biscuits
50g firmly packed brown sugar
110g, butter, melted
For the Pie:
240ml double cream
1 350ml tin sweetened condensed milk
180 ml key lime juice
1 Tbsp lime zest
470ml single cream
lime slices for garnishment


  • Preheat oven to 180°C or Gas Mark 4
  • In a medium bowl, combine digestive biscuit crumbs and brown sugar - stir in melted butter and press the mixture firmly into the bottom of a pie pan. Bake for 8 minutes to set crust.
  • In a large bowl, beat double cream until thickened - preferably with a mixer. Gradually add in sugar and beat until soft peaks are formed. Add condensed milk and beat until stiff peaks are formed. Beat in lime juice, zest, and single cream. Gently spread mixture over cooled crust.
  • Cover and freeze for 4-6 hours until firm. Garnish with lime slices and serve chilled.
