Perfect Jacket Potatoes
Oh, so Simple!
- Start by washing your potatoes under cold water and piercing several times with a fork. Cook in microwave for about 8-10 minutes for a medium potato. Remove and brush skin with vegetable or olive oil.
- Place in a pre-heated oven - "the hotter the oven, the crispier the skin" - Cook for about 10-15 minutes on the center rack.
- To serve, simply cut a cross in the top, squeeze gently from both ends to open up the cross, and top with a sugar-lump size of salted butter or chilled creme fraiche. Add freshly chopped chives or parsley to finish.
Tip: Provide your guests with a "jacket bar" to create their own "perfect" jacket. Offer grated cheeses, fresh herbs/vegetables, and garnishes.
