Tracy's Mississippi Mud Pie

For the Brownie:
8 oz butter
8oz bittersweet chocolate
4 eggs
1/2 tsp salt
1 cup sugar
1 cup brown sugar (dark)
2 tsp vanilla extract
1 cup of all purpose flour
For the Chocolate Pudding:
3/4 cup sugar
pinch of salt
1/3 cup of all purpose flour
2 cups milk (preferably whole)
2 eggs (seperated)
2 Tbsp butter
2 tsp vanilla extract
1/3 cup cocoa powder
To Build Pie:
2 cups Chocolate biscuits - crushed
1/4 cup butter
2 cups heavy cream
1tsp vanilla


  • To make the Brownie: Melt butter and chocolate together in the microwave. In a seperate bowl, whisk eggs, salt, sugars, and vanilla together. Stir egg mixture into chocolate mixture, then add flour. Gently stir until combined
  • To make the Pudding: Combine sugar, salt, cocoa powder and flour in a bowl - slowly stir in milk into mixture. Put mixture in sauce pot and cook until mixture begins to thicken. Beat egg yolks and add to mixture - then add butter and vanilla and cook until thickens - set aside.
  • To Build Pie: Preheat oven to 350°C or Gas Mark 3. Mix the crushed biscuits with the butter and press into a lightly greased pan. Bake for 15 minutes to set crust.
  • Scrape brownie batter into the crust evenly. Bake for 20 minutes. Allow to cool slightly and then pour in pudding mixture.
  • Combine the heavy cream and vanilla and whip until peaks form - Top the chocolate pudding layer. Garnish with more biscuit crumble.

Serves 4-6
