Roasties or Oven Chips
Everyone's Traditional Favorites!
- To peel or not to peel - your preference - and cut into your chosen shape.
- Partly cook in boiling water - 2 minutes for medium cut chips/small roasties and 5 minutes for larger - drain, return to pan, and leave for a few minutes with lid off to allow remaining water to evaporate.
- Place an empty roasting tin (no oil/fat) into a hot oven - preheated to 180°C. Add enough cooking fat/oil to coat lightly - you can use goose fat, beef drippings, olive oil, or vegetable oil - then season with salt. If you want "spicy", add some chopped fresh chilis or a shake of hot sauce with some finely chopped garlic.
- Put the pan lid on and shake gently to disperse the oil and flavours evenly. Place in oven and cook until light golden brown.
Tip: You can cook roasties or oven chips several hours before your guests arrive. Just allow the potatoes to cool, then pop back into a hot oven for 5-10 minutes before you serve up!
