Provencal Tomatoes
           Simply Perfect for the Summer!

Ingredients:
8 large perfectly ripe tomatoes
3 tbsp of olive oil
2 cloves of garlic, skinned
1 tsp of coarse salt
1 small bunch of parsley, finely chopped
1 tsp of herbes de provence
3 Tbsp of white breadcrumbs
   

Directions:

  • Preheat oven to 200°C or Gas Mark 6.
  • Warm the oil in a shallow pan. Cut the tomatoes into halves and place in pan, cut side down, and fry until brown.
  • Crush salt and garlic together then mix with herbs and breadcrumbs. Remove tomatoes, place flesh side up in an oven-proof dish, and sprinkle herb mixture.
  • Bake for 15-20 minutes until tomatoes are soft and herb crust is crisp.
