Ollie's Favorite Tiramisu

5 fresh free-range eggs, seperated
5 Tbsp granulated sugar
500g mascarpone cheese
30 sponge fingers
480 ml expresso coffee
2 Tbsp coffee powder


  • Whip the egg whites until they form hard peaks, set aside.  Whip the egg yolks and sugar until a pale yellow colour. Add the mascarpone cheese and whip for about 5 minutes.
  • Fold in the egg whites to the mascarpone cream and mix. Pour a layer of mascarpone cream into a large glass bowl or several small bowls. Layer with sponge fingers soaked in expresso coffee. Repeat for 2 more layers.
  • Finish with a mascarpone cream layer and sprinkle with coffee powder. You can add chocolate garnish or almonds.

Serves 4-6.
